Egg-quisite Mayo Recipe (by Christal)

We’re real and raw people, and when we love something, we really love it. When my cousin first introduced me to her mayo over a year ago, I fell in love and couldn’t get the taste out of my head. She is always willing to show me new things, and she taught me how to make this Egg-quisite Mayo recipe. If you make this mayo, you won’t go back, but you have to make it fresh. And use Neil’s Eggs!

Non-negotiables:
1 cup of organic Avocado Oil OR Grapeseed Oil (Organic options at Aldi)
1 egg
1 tsp apple cider vinegar
Salt to taste
Pepper to taste
1 tsp Ground Mustard
wide-mouth mason jar
immersion blender (needs to be able to go all the way to the bottom of the jar upon starting to mix)
Optional flavors* and other additions: Dill, Onion Powder, Garlic Powder, Horseradish…. Throw in all your favorite flavors!
Instructions: Check to make sure that your immersion blender goes all the way to the bottom of the jar. Put all the ingredients in the wide-mouth mason jar. Blend the ingredients. Gradually start to pull up on the immersion blender as it thickens. Mix no more than about a minute. Give yourself a pat on the back, you’re done!
